September is such a wonderful time of year if you grow your own vegetables but sometimes the plenty turns to glut! If you are luck enough to have too many tomatoes, try making homemade soup - so much nicer than anything that comes out of a tin! (photo from commons wikimedia)
For a glut of tomatoes : tomatos
Easy tomato soup
  • butter
  • 2 onions
  • 1kg tomatoes roughly chopped
  • 1 tbsp sugar
  • water or stock (optional)
  • torn basil leaves
  • salt & pepper
  • cream
Heat butter and gently cook onions for about 10 mins until softened. Add tomatoes, sugar, basil, water or stock if required and cook for about 15 minutes until tomatoes are soft. Liquidize the soup with a handheld blender, then add cream and season to taste. Totally delicious!
